This morning, I was craving for an omelette. I love making omelettes because they are fast, easy to make, and can be made with just about anything you like or have available like I do. Since I haven’t done my grocery shopping for next week, I was looking to empty the refrigerator by using as much food as I could. I found eggs and some Feta cheese.
When I looked in the cupboard I found a can of spinach. I love spinach for its taste and nutritional values. I kept looking at the can for about a minute. I was trying to figure out what to do with it. I haven’t cooked with spinach in a long time. So, I thought “Why not use it in the omelette?”
I completely drained the spinach. I whisked three medium eggs in a bowl. I added a couple of spoons of crumbled Feta cheese to the eggs along with some pepper, dried dill, and a little bit of milk. I love the fresh dill but I did not have it this time. I heated two tablespoons of extra virgin oil in a frying pan. When it was hot I poured the mixture into the frying pan and while it was cooking I added half of the can of spinach, about 6 oz. After a few minutes, I flipped the omelette with a spatula “trying” to keep it in one piece. When it got brownish on both sides I removed it from the frying pan and placed on a plate. It was good for two servings. I added some toast and Voila! simple and healthy breakfast for fussy people that are not that keen to cook (like me).
*** The dark color of the spinach and the brown color of the omelette in the Featured Image make the omelette look like it was burnt. It was not dried either.
