I’ve Had Enough of This Ham!

Three days after Thanksgiving Day, I still had leftovers ham. I had used some in omelettes and a couple of casseroles and still ended with over a pound of meat that I had no plans for. Then I thought about the dried white beans soup that my mom used to make and the Baby Lima Beans I collected from my new vegetable garden this fall. Now, the solution was simple: Baby Lima Beans With Smoked Ham!

This soup is considered a traditional dish in Romania. It is normally made with white beans and any kind of smoked pork meat. Some people choose to make it meatless. It is a healthy and easy dish to make. All the ingredients and their quantities can be adjusted according to your taste.

This year’s Lima beans harvest. It was first time I grew dried beans.

If you plan having ham for Christmas dinner and are worried that you don’t know what to do with the leftovers try making this soup. There is nothing better for the cold days than the delicious Baby Lima Beans Soup With Smoked Pork Meat (ham). Just follow these simple steps.

Step 1: Place about 10 oz. Baby Lima Beans and baby carrots in a large pot filled with about 6 qt. water. Sprinkle them generously with dried oregano, parsley, salt, and pepper. Boil them at small to medium heat until they are almost cooked.


Step 2: Cut about 1.5 lbs. of meat, or whatever you have leftover, in small pieces on a plate. You can throw away the fatty parts.


Step 3: Place the meat in the pot with a couple of cups of chopped celery and onions and boil at the same heat until all vegetables are cooked.


Step 4: Add a 6 – oz. can of Tomato Paste With Italian Herbs and one 8 – oz. can of Tomato Sauce with Basil, Garlic, and Oregano or any herbs you like and keep boiling until the tomato juices are well absorbed by the other ingredients.

Step 5: Add two tablespoons of finely chopped fresh cilantro, dill, parsley, and the juice of a freshly squeezed lemon and boil for another 10 minutes or until everything in the pot is well cooked. You can also add the juices from the ham for a more smoked flavor like it is done in the cuisine of the Southern United States. Taste often while you are cooking.

Serve with fresh bread and scallions. Makes up to 10 servings. Enjoy!
